The latest edition of 'Cook for Ulster, Yes Chef' features Fermanagh chef Pascal Brissaud of The Watermill Restaurant which is due to open at Kilmore Quay, Lisnaskea in April this year.
The publication highlights the wealth of culinary talent right here in Northern Ireland.
Publisher Shane Smith explains his vision for putting the book together: "So many people look across the pond for top chefs such as Gary Rhodes, Jamie and of course Gordon, that is not to say these guys are not cutting edge chefs, they are, but Yes Chef highlights just exactly what we have here in Ulster and Northern Ireland, a wealth of culinary talent!"
Yes Chef brings together twelve local chefs who take pride in their restaurants and what they cook in their kitchens. Mr Smith continued: "The slant is more on the home cook and what they can achieve in the comfort of their own kitchen. Featured recipes such as a ham hock pot from Stephen Jeffers to crispy Asian style duck from Derek Patterson and of course Beef Bourguignon from our very own Michelin starred chef Derek Creagh of Deans, are all easily achievable and every chef would of course endorse the use of as much local produce where possible. This seems to be the order of the day when it comes to producing a superior dish. The closer the ingredients are to the plate the better."
One of Pascal's dished features Fermanagh Pork Belly, and Pascal intends to work with local butcher and personality Pat O'Doherty using his famous black back bacon in his menus. Pascal is a classically trained French chef and promises to bring the high standards he achieved in The Manor Park restaurant in Armagh.
"With this being the secret to great food we should all get to our closest farmers market and get cooking," Mr Smith adds. "It is well worth a visit to each of the restaurants and maybe sample the dish as it is intended to be served then why not try it at home."
Cook for Ulster YES CHEF is available in all good newsagents priced at a mere £4.95 and all of the restaurants featured.
