Enniskillen lady, Ruth Little, is dipping her toes into the cut and thrust world of fast food but is bringing an innovative and fresh approach to her assault. Indeed, 'fresh' is just the word to describe Rollo Pollo, the fast food outlet that Ruth has opened on the Lisburn Road in Belfast., as it differs from all its competitors by providing a menu devoted to fresh healthy food.
Described as Ulster's first 'healthy' fast food outlet, Rollo Pollo has already got tongues wagging and mouths salivating since it first opened on December 18th.
Ruth took time out on New Years Eve to speak with the 'Fermanagh Herald' about her unique food outlet: "It has been going really well so far, and we have got a lot of positive feedback. Lot's of people have been in, either to get some food or take a menu home."
Ruth's first experience of healthy fast food came when she was in Australia.
A committed high class athlete, she has always eaten well and looked after herself.
"When I was in Australia", she explained, "I used to go to these places called, 'Chicken Shops.' They served fast healthy food and it was inexpensive and totally compatible with the training I was doing."
Things were not as easy, however when she found herself once again needing a healthy post training meal when she was training in Nottingham.
"I remember searching and not being able to find anywhere that did healthy fast food. From there the idea was also there to set up one in Northern Ireland because it was not catered for here either."
And Ruth, who was Irish Junior 800m champion and a Silver medalist at the Australian Junior Championships, is making sure that she has all the bases covered as she attempts to produce the very best in fast food.
"I am importing a special rotisserie which cooks chicken quickly and healthily.
It gives you chicken that is cooked quickly, with little or not fat and grease, yet it is still juicy, tasty and very healthy."
Ruth, who owns and runs Rollo Pollo is enjoying the challenge;
"It is defineatley very different being your own boss, but so far so good and I'm confident that the food will really catch on."
Ruth's best time for the 800M was a highly impressive two minutes and eight seconds, and while she is not promising that her food will be ready that quickly, she can guarantee that it will be fast, tasty and nutritious.
Not a bad combination.
